Tomato & basil soup

Open the cupboard and make the most of tinned tomatoes with this super fast soup

Method

  1. Cook the onion, carrot, celery and crushed garlic in the olive oil, until softened. Add the tinned tomatoes and vegetable stock. Simmer for 15 minutes.
  2. Whizz in a blender. Stir in the double cream and a handful chopped basil.

Winter gazpacho

Put 2 drained tins plum tomatoes, 1 chopped red onion, 1/2 chopped cucumber, 1 chopped red pepper, 1 chopped garlic clove, 200ml vegetable stock, 2 tbsp sherry vinegar in a blender. Whizz until smooth and season well. Chill for 2-3 hours. Serve chilled, topped with diced cucumber, hardboiled egg, red onion, red pepper and croutons.

    A very quick and easy recipe which works out far cheaper than any of the tinned soups. I skipped the cream and added a couple of squirts of tomato puree.

    I made this at the weekend and it was so easy & very tasty. I used passata with chili which gave a nice kick to the soup. I also added less double cream.

    I've just tried this soup for the first time and loved it! It is sooo simple and easy to make and uses mostly ingredients I already had in the cupboard. It's pretty cheap and healthy! I have 1 year old twins and this is a perfect lunch option for me. Thank you so much for sharing!

    This is the first soup i have made and was so easy i will be making it again i left out the celery and added some tomato puree also used tinned tomatoes with herbs and left out the basil.

    added some Worcestershire Sauce to the recipe as advised by earlier reviews stated and also added some Piri Piri sauce to the recipe after being blitzed to give it a real kick! Absolutly fantastic, really warms up a nightshift on Edinburghs Streets!!

    Quick, easy and really more delicious than you would think. You can rustle it up from mostly store-cupboard ingredients too. I would say that the portions are not large - if you're making it for dinner then double the quantities then you'll have enough for two large bowls plus enough left over for one lunch the next day. I've made it for a dinner party starter - adding in some roasted cherry tomatoes towards the end to give it an extra kick. A teaspoon of sugar doesn't hurt either.

    I made this soup for lunch today, it is really tasty and filling too. When it was in the pot cooking I was a bit concerned that it would turn out like a pasta sauce but the finished soup is looks and tastes very different once it has been through the blender. Usually I blend soups with a hand blender but this soup had done in a food processor., which gave it a lovely smooth texture. The recipe is quick and very easy. I made a couple of changes as suggested by others - swapping the cream for low fat Crème fraîche, adding Worcestershire Sauce and seasoning with black pepper.

    I add a level teaspoon of sugar to combat the acidity of the tomato. I also add a few drops of Lee & Perrins sauce and about three teaspoons of Soy sauce which also helps reduce the acid taste of the tomatos.
