Tomato & basil soup

Open the cupboard and make the most of tinned tomatoes with this super fast soup

Method

  1. Cook the onion, carrot, celery and crushed garlic in the olive oil, until softened. Add the tinned tomatoes and vegetable stock. Simmer for 15 minutes.
  2. Whizz in a blender. Stir in the double cream and a handful chopped basil.

Winter gazpacho

Put 2 drained tins plum tomatoes, 1 chopped red onion, 1/2 chopped cucumber, 1 chopped red pepper, 1 chopped garlic clove, 200ml vegetable stock, 2 tbsp sherry vinegar in a blender. Whizz until smooth and season well. Chill for 2-3 hours. Serve chilled, topped with diced cucumber, hardboiled egg, red onion, red pepper and croutons.

    This is a quick and easy soup, but you could try adding smokey bacon before blitzing, make the soup nice and rich.

    this soup's pretty versitile...i make it quite often for quick lunches and you can pretty much just add what you want. i kinda make it up as i go along but this recipe is a good basis for a lovely soup!

    Great recipe for a basic tomato soup. I add lea & perrins to add to the flavour. I have also used tinned tomatoes with garlic and herbs and changed the cream for low fat creme fraiche. Can be made without the celery. Lovely served with crusty bread.

    This is really very lovely and has a great texture when it's been through the blender. The boyfriend loves it too so it gets extra marks! I used a good chunk of garlic and made sure the veg really sweated down before adding the tomatoes to make sure the flavour was really strong.

    This soup is delicious and so easy! I always use creme fraiche rather than double cream. Sometimes needs a tiny bit of sugar x

    Lovely, used Greek basil and added 1 tbsp tomato puree, 1 tsp freshly ground black pepper, 1 dessert spoonful sugar and a dash of Worcestershire sauce to enhance the flavour. Very moreish, had to have second helpings!

    Lovely soup. I used low fat natural yoghurt instead of double cream and added a splash of balsamic vinegar. Will definately make this again.

    A tasty soup, if you want it to have a richer tomato taste add some tomato puree, but it is great as it is. We didn't add the cream, so it was syn free for me and my slimming world!

    i made this last night for my sister and i. it was lovely. we had with with homemade garlic bread. it was beaut. very easy. and a fantasic result. we put a little bit of chilli in it to spice it up a bit. amazing! Recommend it to my friends.
