Method

  1. preheat the oven to 160C seive the bowl ingredients into the bowl
  2. mix the egg,milk, oil and sugar together in the jug
  3. pour the egg mixture into the bowl (add chocolate chips now to make double chocolate muffins) and mix until combined but still lumpy
  4. spoon mixture into cake cases and put the tray in the oven at 160C for 20 until set and cracked at the top if not quite set put back in for a further 10 mins
  5. whilst cooking make up some icing by adding the water to the the icing sugar slowly and bit by bit until the consitency of golden syrup add more icing sugar or water if needed
  6. once muffins are done leave them to stand for 5 mins then cover in icing and eat

    Not much flavour at all. Needs more cocoa and definitely more sugar. Vanilla would help too. Comes out relatively soft, but there are better recipes out there.

    These muffins were AMAZING. Quick easy, simple and a great result Would defiantly recommend this recipe and i will definatly be making them again :)

    Yuk!!! I made these exactly to the recipe and they have to b the worst i have ever made. I even made them again the following day in case i had made an error with the weighing. Unfortunately, not! The mixture was really thick but i wasn't concerned it was when i brought them out the oven they seemed to have an almost shiny surface and they didnt rise like other recipes. The texture was heavy. All in all i gave them my best shot but wudnt bother again complete waste.

    Recipe really easy and my 7 year old son was pleased to have made them. Quite small muffins as we made 12 instead 6. He also insisted 500 g icing sugar was needed but we didn't use it all.

    I am notorius for getting mixed reviews from my critical offspring so am pleased to report that they loved these. I used less sugar than stated as I did not quite have enough when I doubled the recipe. 6 would not be enough in our house! No one noticed the sweetness at all. I had added choc chips though. I did find the initial mix a bit dry so I added some extra milk to loosen it. All flours are different though so I did not find this unusual. My past failures may have been due to overmixing as since I mix sparingly now I have not had a failure. Also it is very important to accurately measure the baking powder, do not use a heaped spoon.

    OMG - these are just amazin - having read through the comments, I doubled the ingredients, put lots of choc and fudge chips, vanilla essense ... AND.. also added some Morrison's defrosted raspberries (cheaper and hold their shape). I added just a tspn more oil, sugar and tablespoon of water. (Used skimmed milk, as all I had). Didn't wish to put any white glace icing as it would spoil the taste of the chocolate Just a fine dusting of icing sugar :).... Yum yum - pure heaven ! 160 degrees for 20 mins was perfect despite having put raspberries in. Made 6 large muffins and 12 smaller ones.
