Method

  1. preheat the oven to 160C seive the bowl ingredients into the bowl
  2. mix the egg,milk, oil and sugar together in the jug
  3. pour the egg mixture into the bowl (add chocolate chips now to make double chocolate muffins) and mix until combined but still lumpy
  4. spoon mixture into cake cases and put the tray in the oven at 160C for 20 until set and cracked at the top if not quite set put back in for a further 10 mins
  5. whilst cooking make up some icing by adding the water to the the icing sugar slowly and bit by bit until the consitency of golden syrup add more icing sugar or water if needed
  6. once muffins are done leave them to stand for 5 mins then cover in icing and eat

    The muffins came out all well.. I made them exactly as in the recipe... measured everything on my digital scale.. I think they should have been a little more sweeter and moist... any suggestions?

    It's 9pm on Sunday evening and just found out it's school cake sale tomorrow!! Googled 'easy chocolate muffin recipe' and found this. I found it easy and quick. It's now 9.40 and I'm just taking them out of oven. They look fab!! Thanks!!

    Hello! From everybody's comment this sure looks tasty. Can somebody tell me how to bake this in a gas oven? I've just got a new one and I don't know how to bake food.. I need help! How do I set the timer in that knob? I'm guessing it's minute wise and the other knob is for the griller.

    I didn't manage to get these to taste very nice...I think they definitely need the choc chips: I didn't have any, which is maybe why they turned out to be a bit tasteless.

    I have tried other muffin recipes with not much success (other types of recipe usually turn out fine for me). This recipe worked and was very easy to do :) I doubled the recipe to make 12 and added chocolate chunks. Loved eating them warm whilst the chocolate chunks were still soft and gooey...mmmmm :)

    Taste delicious! I used standard olive oil and they've come out really moist with a lovely crumby texture. One thing though, there must be a typo in the amount of icing sugar needed; must be 50g not 500g! 500g would bury these half dozen with most of it still in the bowl! I'll be making these again no doubt.

    i tried this and i added half recipe on top of it, i also added couple drops of vannila essence and almond drops to mixture and to the icing i put drop lemon and vannila essence to that too, and put it on cakes whilse warm to make icing melt and reset ,,, loved this recipe

  • In a Bowl
  • 125g Plain Flour
  • 25g Coco powder
  • 1tsp baking powder
  • In a Jug
  • 1 egg
  • 60g sugar
  • 2tbsp oil
  • 100ml milk
  • For the icing:
  • 500g icing sugar
  • 1/2-1 tbsp warm water
