Ingredients

  • In a Bowl
  • 125g Plain Flour
  • 25g Coco powder
  • 1tsp baking powder
  • In a Jug
  • 1 egg
  • 60g sugar
  • 2tbsp oil
  • 100ml milk
  • For the icing:
  • 500g icing sugar
  • 1/2-1 tbsp warm water

Method

    1. preheat the oven to 160C seive the bowl ingredients into the bowl
    2. mix the egg,milk, oil and sugar together in the jug
    3. pour the egg mixture into the bowl (add chocolate chips now to make double chocolate muffins) and mix until combined but still lumpy
    4. spoon mixture into cake cases and put the tray in the oven at 160C for 20 until set and cracked at the top if not quite set put back in for a further 10 mins
    5. whilst cooking make up some icing by adding the water to the the icing sugar slowly and bit by bit until the consitency of golden syrup add more icing sugar or water if needed
    6. once muffins are done leave them to stand for 5 mins then cover in icing and eat

did you use normal or caster sugar ?

I am just making this recipe - am I really meant to cover the muffins in 500g of icing sugar, or any icing sugar? I can't see the picture clearly but they do not appear to be covered.

Made this one a whim and they are great! A tad dry but still yummy. I added chunks and a touch of vanilla and made 24 mini muffins.

I think I overdid it with the baking powder, they were VERY fluffy and turning into a mousse before I scooped the mixture into the cases. I also added a little crushed chilli to spice them up a bit and they tasted heavenly.

i too doubled the recipe, but i also put a rolo in the middle of each muffin they are delish and something i will definately do again, maybe adding different things to the middle :o)

this recipe makes lovely muffins and its really simple. my kind of baking! :)

these are horrible do not make them,they where very dry and had no taste! it may have been the ingrediants but i did not like them!

These were lovely - I doubled the recipe to make 12 and they disappeared rapidly in my office. I had to scrape out every last bit to get 12.

I added some chopped chocolate which was tasty. They were super quick to make and it was great that I had everything in the cupboard.

As a very inexperienced baker I gave these a go, they taste lovely but seem a little dry and have not risen all that well? I followed the recipe exactly, any suggestions?
I have added some white choc chips and they taste yummy so will definitely be trying again!

i'm sure i did something wrong but i've made these muffins twice and both times they came out very heavy and not very nice.

I don't think you did do anything wrong. I had the same experience. Very dry. I think whoever wrote this recipe got their quantity of ingredients wrong.

i made these muffins with my son and we added chunks of chocolate to the top before we cooked them. best muffins we have made in ages

I was thinking of doing this recipe for a late afternoon snack or after tea, would this be a good suggestion. I mean is it tasty if you make it right?

i tried this and i added half recipe on top of it, i also added couple drops of vannila essence and almond drops to mixture and to the icing i put drop lemon and vannila essence to that too, and put it on cakes whilse warm to make icing melt and reset ,,, loved this recipe

Followed the recipe closely. Tasted like something you'd buy from a 24 hour garage. Not good.
