Celeriac & pear soup

Adding a little fruit to this warming soup gives it a light, fresh flavour

Method

  1. Heat 1 tbsp oil in a large saucepan, add the shallots, garlic and ginger and cook over a medium heat for about 5 minutes until softened but not coloured.
  2. Add the celeriac, pears and stock, bring to the boil, then reduce to a simmer and simmer for 20-30 minutes or until the celeriac has softened enough to mash easily.
  3. Liquidise the soup in a blender until silky smooth. If using a food processor whizz until smooth and then sieve it to catch any bits. Season and serve sprinkled with parsley.

Stop celeriac from browning

Celeriac will discolour and turn brown once cut, so either use it straight away or drop it into a bowl of water with a squeeze of lemon juice.

    Fantastic Soup! My partner and I thoroughly enjoyed this! I do agree that it looks a little like baby food but the taste makes up for the appearance! Simple... but nice to have a soup thats a little bit different! Very easy to make although the celeriac takes a bit of time to chop up! We will be having this as a starter when we have guests over later in the week as it's so good - and i will sprinkle a little parsley on top to make it look a little nicer!

    Had no shallot, so half a big onion instead....listened to the comments about it looking like baby food...so added 1 tablespoon of half-fat creme fraiche and juice of half a lemon..result!!!! Absolutely fantastic :o)

    this was unusual, festive and really tasty. I believe it tasted better when reheated on the second day - the shallots and ginger came through more. Was tempted to avoid the sieving bit but glad I did in the end as it was nice and smooth. Yes the colour isn't great, but with parsley and pepper on top it tastes amazing!

    Am I right in thinking this means 800g of celeriac before peeling, so according to the GoodFood prep guide, around 600g actually goes in the pot?
