Cod with tomato & chorizo sauce

Method

  1. Heat 1 tbsp olive oil in a pan then cook the garlic and chorizo for a few minutes. Add the chilli and tomatoes and simmer for 10 minutes until thickened, season.
  2. Meanwhile rub the fish with a little more oil, season and grill or steam until cooked through, about 4-6 minutes. Serve the fish with the sauce and green beans.

    Lovely, added extra chorizo and cooked the fish in the oven for 10 mins on top of the sauce. Served it with sugar snaps peas and basmati and wild rice. Good weekday meal.

    We love this recipe - tasty and quick - made this a couple of times now and added extra chirizo and garlic and cooked fish on top of sauce for ten mins - tastes lovely and less dishes!

    Very yummy and will become a regular with us. I also added a little extra chorizo and cooked the fish with the sauce. I also think the sauce would work well with chicken so will give that a go too.

    This is a great low cal dish if you are sneakily trying to diet without telling anyone! Also it makes a great pasta sauce on it's own. Soooo easy and good for you - what's not to like?!
