Cod with tomato & chorizo sauce

Try this quick low-fat dish when you next fancy a fish supper, ready in less time than it takes to get a takeaway

Method

  1. Heat 1 tbsp olive oil in a pan then cook the garlic and chorizo for a few minutes. Add the chilli and tomatoes and simmer for 10 minutes until thickened, season.
  2. Meanwhile rub the fish with a little more oil, season and grill or steam until cooked through, about 4-6 minutes. Serve the fish with the sauce and green beans.

    Easy to make, but I'm not sure if the fish and sauce go together. Definitely would add more chorizo, garlic and chilli for deeper flavour.

    Serve with some brown rice and you can steam your cod on top of the rice when the water boils down enough.

    This was lovely, very easy and delicious. I poached the cod in the sauce as suggested by others, served with green beans and some mini roast potatoes.

    This is excellent - the flavours work really well, without overpowering the fish. I also steamed my haddock on top of the sauce. RE recepie adaptations - I added half a tin of kidney beans in chilli sauce, a dollop of mascarpone, and served with tomato and onion couscous.

    I used fresh chilli too, and it was quite spicey - I also poached the fish in the sauce, but it ended up falling apart! :-( My chorizo was the real stuff from Spain and it also fell apart in the pan - might have to try this again with supermarket chorizo, and cook the fish as directed!

    I made this last night with haddock, as husband's trying to lose weight (new year's resolution!). It was delicious! The sauce was spicy and went really well with the fish. We had it with green beans and spinach and I admit to being hungry an hour later as no carbs. Next time will make it with brown rice.

    this was so easy and so tasty! I doubled the garlic and chili flakes and poached frozen cod fillets in the sauce for about 10min and served it with green beans as suggested, with brown basmati rice. Will definitely cook again!

    The first time that I made this dish I followed the recipe exactly and felt it lacked something! I then followed other tips on here and added some fresh chilli, a bit of chopped red onion and extra chorizo then poached the fish in the sauce and this really made the dish! It's now a firm favourite accompanied by some boiled new potatoes and veg.

    Very easy to make and really delicious. Was surprised by how quick is was to prepare and cook! The sauce was lovely and could easily be used for other meats or pasta - very versatile!

    Nice dish for a quick healthy midweek dinner, I didn't bother with the oil as I feel the chorizo has enough oil of its own. Very tasty sauce.

    A lovely quick, easy and very tasty supper. I started by sweating a sliced red onion and red pepper, used skinned fresh tomatoes with a squeeze of tomato puree and more chorizo than the recipe. I also added the fish to the sauce to cook through and served with Gallos 3 grain mix which gave a good texture to the dish and soaked up the lovely sauce. Definitely one to make again and the basic recipe can easily be adapted to whatever is in the fridge.
