Cod with tomato & chorizo sauce

Try this quick low-fat dish when you next fancy a fish supper, ready in less time than it takes to get a takeaway

Method

  1. Heat 1 tbsp olive oil in a pan then cook the garlic and chorizo for a few minutes. Add the chilli and tomatoes and simmer for 10 minutes until thickened, season.
  2. Meanwhile rub the fish with a little more oil, season and grill or steam until cooked through, about 4-6 minutes. Serve the fish with the sauce and green beans.

    Had this tonight and it was surprisingly tasty and sooooo quick and easy! I added extra chilli flakes and extra garlic to the sauce and also served with 50g of brown rice.

    This was wonderful. I poached the cod fillets in the sauce and I used a fresh chilli rather than chilli flakes.

    Really nice contast between the simple white fish and the spicy tomatoey sauce - and really easy too! Served with green beans, as suggested, and some boiled new potatoes.

    This was a wonderfull dish very simple, Iused a coley loin and poached it on top of the sauce with fresh chillys and served it on a bed of basmarti rice.

    I did what others have and poached the fish on the top of the sauce, it took about 10 mins and was lovely soft flaky and moist fish. The sauce would be lovely with chicken too.

    Used a bit more chorizo than recommended, also added half a diced red onion (fried with the garlic and chorizo). Served with the green beans as recommended, also some homemade sweet potato chips. Lovely.

    I used a bit more chorizo than suggested, and added a drop of red wine and a bit of sugar to reduce to acidity. The result is a really rich tomato sauce that you can cook anything in, including turkey fillets or chicken.

    Fab sauce, especially when you consider it's so quick. I added a bit more chorizo than suggested and the sauce had a lovely smokey paprika taste with a kick from the chilli. I served with the suggested green beans and the garlic & basil ciabatta recipe (on this site) Really good!
