Skinny pizza

Use a pizza-base or ciabatta bread mix and it'll be on the table quicker than a takeaway

Method

  1. Heat the oven to 220C/fan 200C/gas 7. Make up the pizza base according to pack instructions. Roll out to a large circle (about 22cm) and put on a non-stick heavy baking sheet for 10 minutes to puff up a bit.
  2. Heat a non-stick frying pan with 1 tbsp olive oil, add the garlic and cook for a minute. Add the tomatoes, season, then cook, squashing down the tomatoes with a fork until broken down and thickened. Cool.
  3. Spread the tomatoes over the pizza base and top with mozzarella. Bake for 20 minutes until puffed and golden. To serve, scatter over the rocket and parmesan shavings.

    Made this for the family. Used a whole ciabatta bread mix - popped it in bread-maker on dough setting and spread it to fit my large grill pan. I am not a fan of rocket but gave it a go and I was really surprised how well it went down. Simple basic recipe - lots of options to tweak toppings too.
