Thai burgers with salsa & sweet potato wedges

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Toss the potato wedges with 1/2 tbsp olive oil. Put on a baking tray and sprinkle with salt. Bake for 20-25 minutes until tender.
  2. Meanwhile, mix together the pork, curry paste, grated onion and half the coriander. Season and form into 4 burgers. Brush the burgers with a little oil then grill or griddle for 5-6 minutes each side until they are cooked through.
  3. For the mango salsa, mix the mango, chilli and the rest of the coriander with the lime juice. To serve, put a burger on top of some little gem leaves and spoon over some salsa. Serve with the sweet potato wedges.

    Lovely recipe, we also added onion to the salsa but we served it with a noodle salad. Made the bugers into small bites and worked really well. We make this often and it always gets great comments.

    Loved, loved, loved this recipe! Even my 9 year old who is normally the fussiest fusser From fussville loved it too! Definitely a keeper!

    Prepared the burgers in the morning and left them in little muffin moulds in the fridge to hold their shape...also added some olive oil to the burger mixture so it would bind better. Was still a little crumbly but not too bad - may try the egg suggestion next time. Also found the sweet potatoes a bit soft, even after heating the oil in the baking tray before adding the wedges...but they still tasted nice! Really nice flavours altogether and will definitely do again!

    I made this with turkey breast mince instead. This recipe was great. So many fabulous tastes going round my mouth! Definitely will make again. I had no probs with burgers crumbling either. I'm really a novice when it comes to cooking but these were easy to make and it's encouraging me to cook more in the kitchen. 5 stars for taste 5 stars for easiness to make

    This has become a family favourite! I would doubt the calorie content though as I feel it is much higher given a small sweet potato would be nearly 200 cals
