One-pot chicken chasseur

This French bistro classic is easy to make at home and fabulous with creamy mash or crusty bread

Method

  1. Heat the oil and half the butter in a large lidded casserole. Season the chicken, then fry for about 5 mins on each side until golden brown. Remove and set aside.
  2. Melt the rest of the butter in the pan. Add the onion, then fry for about 5 mins until soft. Add garlic, cook for about 1 min, add the mushrooms, cook for 2 mins, then add the wine. Stir in the tomato purée, let the liquid bubble and reduce for about 5 mins, then stir in the thyme and pour over the stock. Slip the chicken back into the pan, then cover and simmer on a low heat for about 1 hr until the chicken is very tender.
  3. Remove the chicken from the pan and keep warm. Rapidly boil down the sauce for 10 mins or so until it is syrupy and the flavour has concentrated. Put the chicken legs back into the sauce and serve.

    This recipe is madly delicious! I missed out the mushrooms (not a fan) and served with mashed potato and green beans. It was sooooo yummy!

    Ok so you got my curiosity up with this being the most popular one pot dish. I made it pretty much to recipe, used rosemary instead of thyme (personal preference) and bone in skin on chicken breasts. It was WONDERFUL!!!!!! This is something I would use for guests and get started early and have the hour simmering time a good time for drinks. Will definately be makeing again!!!!!!!!!!!!!

    Delicious! Sauce is very tastey and mushrooms had great flavour! Will be cooking this again! Had it with Rice and Spinach with Pine nuts and Garlic.

    A delicious and warming winter supper. I used chicken thigh meat and removed the skin (because I dont like it) and it worked nicely. Husband has demanded I make this again - he loved it.

    I've made this twice now but for 6 people so doubled the quantities, it came out perfect both times...such a tasty dish and will certainly make again soon. I cooked in the oven though as like to just put it in an forget about it for a while! I just de-greased an reduced the sauce down on the hob before serving.

    Absolutely delicious! What an incredible flavour the sauce has. The chicken was lovely and tender and instead of chestnut mushrooms I used some porcini mushrooms which added a lovely intense flavour to the red wine and garlic. Served with creamy mash, green beans and parsnips it was a truely wonderful wintery dish to make. I will definitely be making this again soon!

    Love this recipe. Find it works well in the slow cooker if I reduce all the liquids by about half as slow cooking seems to produce liquid rather than reducing it. More economical on the wine too!
