Fully loaded Cajun chicken burgers

Grilled Cajun-spiced chicken breasts topped with bacon, avocado and cheese... set to become a Friday night favourite

Method

  1. Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.
  2. While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.
  3. To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

Try a simple side salad

Layer alternate slices of avocado, tomato and mozzarella. Scatter it with torn basil before drizzling over your favourite dressing.

    Really yummy, added an extra slice of cheese and used crusty rolls. Only problem was the avocado still slipped out. Would definately make again.

    Quite simply - gorgeous. Salsa and sour cream found their way onto some peoples plates too. I have to say that I seal the chicken in a pan and then put in the oven for 15 - 20 minutes as I am always wary of undercooked chicken. BBQ next time.

    LOVED it!! Not a big fan on burgers so found this chicken one and said I would give it a go. Had all the spices just had to run out to get fresh bread and avocado. Partner LOVED it. so much so that for three days solid he brought home the ingredients from work and asked me to make it for him every day. Taking a break from it now but its certainly a keeper!!

    -Excellent recipe. If you want to make it healthier then leave out the cheese, use garlic sauce instead of mayo and turkey rashers instead of bacon! Winner!

    Couldn't buy any avocado, but was just as lovely without. Also used mexican cheese slices, which were lovely. Served with sweet potato and potato chips, and a side salad of lettice and spinach with a lime and chilli dressing. Boyfriend loved it, which is a rarity ;)

    Really good! What a lovely surprise. I expected the cajun to be more overwhelming, but it was the perfect mix. Lovely how subtle the bacon and avocado tasted on the background. Definitely the best chicken burger i have come across and in my top 3 of burgers. Cheers!

    On a diet so I changed a few things, dropped the cheese and bacon, kept the avacado (good fats), switched the buns for wholemeal pittas and stuffed full of lightly dressed salad. Really delicious and super healthy :)

    I'm making these tonight but I'm not doing the burgers I will serve with Salad as its such a beautiful sunny day. I'm going to slice them and pop on top of baby asparagus with a salad of Iceberg lettuce, on the vine tomatoes, cucumber, spring onion, celery (for partner I only like celery cooked), sliced red pointy pepper and Ciabatta rolls. I wanted to get avocado but they were all as hard as nails in the shop and I couldn't have ripened them in time for tonight.
