For the cajun seasoning

  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp paprika

  1. Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.

  2. While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.

  3. To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

What a lovely surprise.
I expected the cajun to be more overwhelming, but it was the perfect mix.
Lovely how subtle the bacon and avocado tasted on the background.
Definitely the best chicken burger i have come across and in my top 3 of burgers.

This one's a keeper! Had it with home cut over chips lightly seasoned with salt, pepper and pimento paprika.

Couldn't buy any avocado, but was just as lovely without. Also used mexican cheese slices, which were lovely. Served with sweet potato and potato chips, and a side salad of lettice and spinach with a lime and chilli dressing. Boyfriend loved it, which is a rarity ;)

-Excellent recipe. If you want to make it healthier then leave out the cheese, use garlic sauce instead of mayo and turkey rashers instead of bacon! Winner!

LOVED it!! Not a big fan on burgers so found this chicken one and said I would give it a go. Had all the spices just had to run out to get fresh bread and avocado. Partner LOVED it. so much so that for three days solid he brought home the ingredients from work and asked me to make it for him every day. Taking a break from it now but its certainly a keeper!!

Quite simply - gorgeous. Salsa and sour cream found their way onto some peoples plates too.

I have to say that I seal the chicken in a pan and then put in the oven for 15 - 20 minutes as I am always wary of undercooked chicken.

BBQ next time.

Really yummy, added an extra slice of cheese and used crusty rolls. Only problem was the avocado still slipped out. Would definately make again.

Gorgeous summer mid week tea. Really enjoyed them. The avocado worked really well. I don't really like loads of meat so i used half a breast for me which was enough. Can't wait to make next week! Jayne

Wanted something quick to cook tonight as i wanted to go into the garden to make full use of the good weather, came across this recipe and thought i'd try it. What can i say apart from FANTASTIC my hubby loved it and said that it was one of the best burgers he's had, coming from him is praise indeed as he is quite fussy with his food.

I made these last night and I have to agree with other comments - they were delicious! Next time I'd grill the bacon, just because I prefer it really crispy and would omit the avocado, perhaps replace with thinly sliced rings of onion. Will definitely make again!
