Method

  1. Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.

  2. While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.

  3. To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

It's very nice, quick and easy to make. My missus loved it, but I will add a bit more "punch" next time for me.

Best burgers I have ever had! Massive hit with my family and my sister-in-law actually said it was better than the burger she normally gets from Nando's!! These will definitely be a regular thing from now on, thank you 11/10

This is a lovely recipe and I was especially pleased about how easy it was to make the cajun seasoning! Instead of slicing the avacado, I mashed it up with chopped tomato, added salt & pepper and a squeeze of lemon then spread it on the side of the ciabatta. For extra bite I also added a few jalepenos!

Delicious! Partner and I loved it, especially the way the advocado is inbetween the chicken. I will definately be making this again. We also had some left over chicken so had it in a salad for lunch the next day.

Absolutely fantastic recipe!l A huge hit with all the family, I've never been able to fins the ciabatta rolls but just use ordinary crusty rolls, granary rolls are especially good with the burgers too

Everyone loved it!

For my fussy boyfriend I added lettuce and tomato and doubled up on the bacon.

I also allowed the chicken to marinade for a while and then cooked them!

Talking healthy? I've cut out the bun with burgers. I slice a large w/m pitta across the middle and stuff burgers into the pockets. You need to slather on any sauce, mustard or relish beforehand, tho'.

Tried it last night for the first time and it's delicious - it'll definitely be on our weekly list now. Hubby added some red onion for extra pep... lol, my mouth is watering now just thinking about it!

I'm making these tonight but I'm not doing the burgers I will serve with Salad as its such a beautiful sunny day.
I'm going to slice them and pop on top of baby asparagus with a salad of Iceberg lettuce, on the vine tomatoes, cucumber, spring onion, celery (for partner I only like celery cooked), sliced red pointy pepper and Ciabatta rolls.
I wanted to get avocado but they were all as hard as nails in the shop and I couldn't have ripened them in time for tonight.

On a diet so I changed a few things, dropped the cheese and bacon, kept the avacado (good fats), switched the buns for wholemeal pittas and stuffed full of lightly dressed salad. Really delicious and super healthy :)
