Avocado, prawn & fennel cocktails

Method

  1. Make the dressing by mixing the oil and citrus juices together in a small bowl with some salt and pepper, then set aside.
  2. In a bowl, toss all the other ingredients, except the rocket, together with the orange segments and half of the dressing. Scatter the rocket leaves into 4 Martini glasses or small bowls, pile the salad into the centre, then drizzle with the remaining dressing just before serving.

Simple avocado salsa

Finely dice an avocado and stir it through a tub of bought tomato salsa, plus some finely chopped fresh coriander, if you like.

    I made this today exactly as the recipe, I was cooking for my best friend and her husband. It was gorgeous and everyone loved it. Well worth making. A great recipe.

    I tried this out as a starter for a dinner party and everybody loved it. It is really easy to prepare and absolutely delicious. My husband loves it as a light evening supper dish.

    I have made this many times now, as a starter to a dinner party and as a light suppe. It is always good and received well. I have not changed anything as it is fantastic as it is.

    I made this when we had friends round for dinner and it was delicious! I was slightly dubious about the flavour combinations but it really was very tasty : ) This recipe gets 5 stars!
