Best-ever chunky guacamole

  1. Use a large knife to pulverise the tomato to a pulp on a board, then tip into a bowl. Halve and stone the avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl with the tomato.

  2. Tip all the other ingredients into the bowl, then season with salt and pepper. Use a whisk to roughly mash everything together. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed. Scatter with the coriander, if using, then serve with tortilla chips or spicy wedges and sour cream.

Made the guacomole to go with the chilli bean recipe as suggested. If I was to make it again I would use less lime juice which I thought prevaded a litlle too strongly. Okay but not amazing.

Just finished gobbling this up and it was delicious! Way better than shop bought and worth the effort. We didn't have any red onion so we used a spring onion and it worked just as well!

I loved this recipe! I blitzed it in the food processor just because I prefer a smoother guac but the flavours were lovely. Defo to be made again & again!

Just eating this now and really enjoying it! First time I have made my own Guacamole and am never going back to the supermarket option :) Added the garlic as suggested because I love garlic and only used half the onion = spot on.
