Ham & leek cobbler

Use up a leftover chunk of ham in this healthy, but hearty, family supper

Method

  1. Heat oven to 200C/fan 180C/gas 6. Heat ½ tbsp oil in a large pan, then fry the leeks, stirring for 5 mins until starting to soften. Add the stock, then simmer for 5 mins.
  2. Meanwhile, tip the flour into a bowl, make a well in the centre, then add the yogurt, remaining oil, thyme leaves and a little salt. Using a cutlery knife, mix to bring together to a soft dough. Divide into 4 and shape into rounds on a floured surface.
  3. Stir the peas, ham and grated apple into the leeks, then divide between 4 individual pie dishes or one large dish. Top each with a round of dough, scatter with more thyme, then bake for 20 mins until golden.

Tip

Look for the mixed ends of ham on your supermarket's deli counter. Cheaper than buying freshly cut, they're a great buy when you don't need large slices and just want to shred the ham for cooking.

    Found this very tasty, especially the cobbler which could be adapted as a topping on other dishes. Next time, as I am only cooking for two, I would halve the bottom ingredients but keep the same amount of dough on top because that is the best bit!

    Very simple and quite cheap to put together. I used chopped gammon steaks and fried them off with the leeks from the start. I think this serves three at most.

    I liked this dish, but think the quantities are a little out. I used 85g cooked gammon for two of us (not sure how 85g would feed four) I also made the same amount of cobbler topping for two of us, but halved the amount of leeks, peas & stock. Unfortunately my flatmate ate the apple I had put aside for this for breakfast (!!) so I added some cornflour to thicken a little before putting in the oven. The end result was good, but I am not sure it would have been if I had followed the recipe to the letter!

    I thought this was pretty bland. I drained off the liquid before moving the leek mixture to the baking dish. The vegetables gave up alot of liquid after baking, and if I hadn't drained, this would have been a soup with a crust.

    Delicious, light and fresh tasting, I did adapt it slightly as I realised I only had half the required amount of leeks! I replaced the missing leeks with white cabbage, which i added just before Iput the topping on, it was a winner as the cabbag went really well with all the other ingredients. Would thicken the stock next time as I foung it just abit to thin for my liking. A family staple now in our house, clean plates everytime.

    Lovely. I agree that it serves 3 rather than 4. I had run out of natural yoghurt so just used semi skimmed milk and it was fine. I didnt have any thyme and wished I'd thought to use parsley as I'm sure that would have gone well. My daughter had been picking at the left over ham so I had to cook some bacon as well.

    I adapted this as was making for two - but never really follow recipes to the letter anyway! Did find that I needed more yoghurt to make my cobbler bind - but we both really enjoyed this dish. I have made a few times and it's very tasty.

    Really good healthy alternative to suet cobbler topping! I would recommend adding creme fresh to the mixture as i found it very watery and had to drain off some of the excess fluid, otherwise very tasty

    Whole family enjoyed this but it had too much liquid even after I thickened it slightly. I think it would also work really well with a mashed potato topping.

    The cobbler is lovely and light after I doubled the ammount of self raising flour in this recipe as it was too sticky. Otherwise perfect so I refuse to mark it down.

    Lovely but go and talk to your local butcher he will nearly always have the end of a ham he can sell you particularly if you go on a Saturday lunchtime when he is closing for the weekend.

    Good with leftover chicken (leave out the apple). I thickened it with chicken gravy granules and gave it a few extra minutes to brown the top, lovely

    Hubby and I really enjoyed this - as I was desperate to try new ways to use up leftover xmas ham - getting tired of ham sandwiches! Thought it wa a bit watery so will try to thicken or drain off liquid next time, and I didn't have enough leeks so I added mushrooms which were lovely. Also used more ham than suggested - mainly because I have so much to use up :) Will definitely make again.
