Spicy chicken & bean wrap

Use up leftover cooked chicken in this Mexican-style wrap, for an easy, tasty lunch

Method

  1. Warm the tortilla in the microwave for 10 secs; this will soften it and makes it easier to roll. Place the chicken and beans along the middle. Season, then spoon over the salsa and scatter with peppers or Tabasco. Lay the tomatoes and leaves on top. Bring the bottom of the tortilla up over the filling. Fold the sides in, then roll into a tight wrap. Pack up tightly to keep it together.

    Don't knock it until you've tried it :-). Thought it was really nice - used a bit more salsa and added some shredded cheddar on top. Great way of using up cooked chicken. Microwaving the tortilla just made it dry for me though...

    So mine didn't look as neat as the pic and i made a few changes. I used a multiseed tortilla wrap and cooked the kidney beans before i put them in. also, i didn't use jalepenos or tabasco as i didn't have any, but it made an incredibly tasty, simple and filling lunch - haven't felt the need to snack at all this afternoon.

    Tasted healthy but not lovely. Definitely needed lots of salsa as abit dry and tasteless otherwise.

    tortilla wrappers only need ca. 30 second in the microwave. They should be hot to touch. They go dry and hard if they are in to long.

    With the tortillas it is best to wrap them in a tea towel to keep the moisture in them. Or if you have a gas hob just heat them on their and flip over every 5 seconds for 30 seconds and it is nice and cooked and toasted.:-) Loved this, even the kids loved it.(without the Chili)

  • handful leftover chicken , shredded
  • 4 tbsp drained black beans or kidney beans
  • 4 slices pickled jalapeño pepper (or a good splash Tabasco)
  • 3 cherry tomatoes , halved
  • handful rocket or spinach leaves
  • 2 tbsp spicy salsa from a jar
