Speedy meatball stew

Serve beef meatballs in a tomato casserole with garlic and rosemary and eat with pasta or crusty bread

Method

  1. Boil the potatoes for 10 mins until tender. Meanwhile, heat the oil in a large saucepan. Season the meatballs, then brown them all over for about 5 mins. Remove from the pan, drain off any excess fat, then add the onion, garlic and rosemary. Fry gently for 5 mins.
  2. Add passata to the pan, bring to a simmer, then add the meatballs. Simmer for 5 mins or until everything is cooked through. Add the potatoes and peas, then simmer for 1 min. Pack into a flask or reheat at work, add Parmesan, if using, and eat with good crusty bread.

Sausages in the fridge?

Slice the sausages open with a sharp knife, squeeze the meat from the skins and brown in a little oil before adding to the tomato sauce.

    Easy and tasty, though between tghe two of us we finished it all in one day so I would recommend making more than the recipe states if you have more than 2 hungry people to feed!

    Lovely meal. I use veggie meatballs & tinned tomatoes, also some chilli just adds a liitle more taste.

    I've made a few changes to this recipe. I left out the potatoes, added Worcestershire sauce, chili flakes & seasoning. Served over spaghetti - very, very tasty.

    Boring in itself but a good basis for playing around with different flavours. I sometimes do Moroccan style with cumin, cinnamon and ras al hanout, served with bread. Sometimes with indian spices and serve with rice or naan.

    Have made this dish a few times. Really easy to make and perfect for a mid week meal. Loads of flavour. I put it all in the over for a while and add a dash of worcestershire sauce this lets all the flavours mingle. Yummy!!

    I use Bbcgoodfood for most my recipes and have tried hundreds....this was by far the worst. Unless you love the taste over rosemary this dish was awful. We actually threw it away which we never do. Waste of time and money unless you have an addicted to rosemary!

    Cooked the meatballs in the over(easier to get the fat out) and it's super delicious!! Fills you right up, excellent for dieters :)

    This went down very well as a midweek supper will definitely cook again, i used a tin of cherry tomatoes instead of passata though.
