Quinoa with stir-fried winter veg

Method

  1. Cook the quinoa according to pack instructions. Meanwhile, heat 3 tbsp of the oil in a wok or large pan, then add the garlic and quickly fry for 1 min. Throw in the carrots, leeks and broccoli, then stir-fry for 2 mins until everything is glistening.
  2. Add the sundried tomatoes, mix together the stock and tomato purée, then add to the pan. Cover, then cook for 3 mins. Drain the quinoa, then toss in the remaining oil and the lemon juice. Divide between warm plates and spoon the vegetables on top.

    The recipe didn't look too inspiring, so I added some korma curry paste to the stock and also used fresh tomatoes in place of the dried. I chopped up and fried some paneer and stirred it into the finished dish and served with couscous and coriander instead of the quinoa. Went down well with the family.

    Might not have looked inspiring, but it tasted delicious. Have never eaten quinoa before but the oil and lemon juice were just the thing to make it into an alternative to pasta or couscous.

    Really enjoyed this, however not the best quinoa recipe i have made. The vegetables mixed really well with the quinoa and made a very healthy and delicious dinner.

    The Bearded Hubby and I absolutely love this recipe and make it often. I'm not a huge fan of leeks, mind - have made it with them once but usually leave out in favour of red onion.

    It was very easy and practical to prepare and cook. Aesthetically pleasing. The stir-fried vegetables added a delicious taste to the quinoa. Nice combination. I would cook it again. I've added a sprinkle of cheddar cheese to give it a bit more of flavour. It was delicious. I do recommend. Thanks for this recipe.

    I loved this - just made it now as a way of using up some veg (had broccoli and carrots and used red onion in place of the leeks) I love quinoa for summer packed lunch salads but was looking for something more 'comforting' for the winter. I was a bit dubious how tasty this would be but it was lovely: I think the sun dried tomatoes are the key and really lift the flavour (I threw in a few extra as it was the end of the jar). Chop the broccoli into tiny florets or it's a bit crunchy, even for someone who loves their veg al dente like me. This will definitely become a regular and it's a bonus it's so healthy.
