Chicken & white bean stew

This flavoursome, low-fat casserole freezes really well, so why not make double and freeze half for next time

Method

  1. Heat the oil in a large pan, add the chicken, then fry until lightly browned. Add the veg, then fry for a few mins more. Stir in the herbs and stock. Bring to the boil. Stir well, reduce the heat, then cover and cook for 40 mins, until the chicken is tender.
  2. Stir the beans into the pan, then simmer for 5 mins. Stir in the parsley and serve with crusty bread.

    Really tasty & filling! I omitted the oil but fried off some lardons, before adding the chicken. I added 3 large potatoes cubed, & replaced the celery with a leek. I used 4 large carrots in chunks & also added some soaked split broad beans. The result was a beautiful thick yummy bowl (or 2...) of loveliness for a freezing evening!! Served with crusty bread & a glass of red.

    Amazing recipe, have made this so many times. I added some chopped bacon too which was amazing. Very tasty and filling and really easy to make. I even dragged the hubby in to help prep!

    3 Words... Easy, Tasty..Healthy!! Just made this and its great, got some of those plastic cartons and portioned it up for throughout the week to take to work for lunch! Fantastic, totally recommend

    Brilliant!! Wasn't expecting much from this as it seemed too simple...but it really is good! I am dieting so make a double batch of this and freeze in individual portions. Didn't have haricot beans last time so used a mix of cannelini, butterbeans and chickpeas...even better!!! A weekly favourite now that you wouldn't know was low fat!

    This was gorgeous. Though I've just realised that I forgot to put haricot beans in. I also tried this recipe without the chicken and added fresh tortellini to the soup at the end. That was nice to. it's a bit similar to Italian brodo.

    Was surprised at just how tasty this was, with so few ingredients and being so simple. Even OH, who is not a great lover of celery, liked it. Definitely in the 'tried, tested and ticked' category.

    Agree with earlier coments really tasty. I sometimes add mixed beans in hot/spicy sauce and some sweet chilli sauce to jazz it up. New pototaes added go well too!

    Make this all the time, feeds whole family including fussy one and three year old. Sometimes vary veg and beans depending on what I have. I've used courgette and borlotti beans and not added parsley as I've nt had any. Freezes great... I am so glad to have this in my repertoire!

    I love this receipe. I add chilli flakes to give it some heat, garlic and fresh corriander to garnish. Cant fault it. I love chicken and it seems to be popluar with my 1year old too.

    I'm trying to lose some weight and I was looking for something quick and whole and with some soup to it, I came across this recipe and it turned out really good. I added some potatoes and peas and used a bit less white beans and celery leaves instead of parsley and it was very much what I had in mind. A simple quick and good-tasting recipe.

  • 600ml vegetable or chicken stock
  • 2 x 400g / 14oz cans haricot beans , drained
