Chicken & white bean stew

This flavoursome, low-fat casserole freezes really well, so why not make double and freeze half for next time

Method

  1. Heat the oil in a large pan, add the chicken, then fry until lightly browned. Add the veg, then fry for a few mins more. Stir in the herbs and stock. Bring to the boil. Stir well, reduce the heat, then cover and cook for 40 mins, until the chicken is tender.
  2. Stir the beans into the pan, then simmer for 5 mins. Stir in the parsley and serve with crusty bread.

    My family love this meal. I usually add some chopped up, fried pancetta to give it a bit more flavour & depth. With some warm, crusty bread & a glass of white wine, it does very nicely for a Saturday autumn supper!

    Very disappointing! Reading the list of ingredients, I worried that this might be bland. However, given the large number of positive reviews, I thought I'd give it the benefit of the doubt. I used Knorr stockpot stock cubes, as recommended by other reviewers. Unfortunately the end result was incredibly bland and tasteless - I've actually just ordered takeaway pizza as there is no way that I can serve this up to my husband when he gets in at 7.30 from a long day at work.

    Made this for 2 of us so it did us for two meals. Ate crusty olive bread with it on the first night and garlic bread the second. An absolutely delicious meal, very easy to make. Amazed at how tasty it is considering the simple ingredients. Very filling, great on a cold evening. As I am trying to lose weight, it suited my dietary requiremnts. Hubby loved it and has asked that we have it again - it definitely goes in my "keeper" box!

    Didn't have any haricot so used 1xflagolet and 1xcannelini also added some garlic and a little balsamic vinegar. Yum!

    I'm not generally a big fan of stews, but decided to try this recipe on the grounds of the overwhelmingly positive reviews it has received. Whilst it did have a nice flavour, it was a fairly standard stew and so has not made a convert of me. Or my husband, who picked out the chicken and left the rest!

    Simply delicious!!!! We are on post-Xmas diets and it is very wholesome and filling for such a low calorie/low fat recipe. I used just one tin of beans, and 850mls of stock- half vegetable, half chicken and made it with thyme.

  • 2 tbsp sunflower oil
  • 400g boneless, skinless chicken thighs , trimmed and cut into chunks
  • 1 onion , finely chopped
  • 3 carrots , finely chopped
  • 3 celery sticks, finely chopped
  • 2 thyme sprigs or ½ tsp dried
  • 1 bay leaf , fresh or dried
  • 600ml vegetable or chicken stock
  • 2 x 400g / 14oz cans haricot beans , drained
  • chopped parsley , to serve
