Cheese, bacon & onion puff

Bake a basic batter mixture with a few added ingredients for a simple family supper

Method

  1. Heat oven to 230C/fan 210C/gas 8. Make up the batter as stated in the pancake recipe and set aside. Grease a large, round, ceramic dish, about 22cm wide, and dust it with the grated Parmesan.
  2. Heat the butter in a frying pan. Sizzle the bacon for about 5 mins until crisp, then leave to cool. Tip the bacon, onion and cheddar into the batter and stir until completely combined. Tip the batter into the prepared dish so it comes almost to the top, then bake for 30-35 mins until puffed up and golden. Bring piping hot to the table and serve straight from the dish with a crisp salad.

    I made this for my family who thoroughly enjoyed it I made the following alterations: I used very strong Canadian Cheddar as we don't like Parmesan, I didn't have any spring onions so I used chopped onion and lightly softened it before frying the bacon. I served it with sausages, creamy mash and baked beans. I will definately be making this again.

    This is a "bendy" recipe:- you can use any good, strong cheese, I used the bits and bobs left in the fridge, including pecorino, and it was fab. I also like to use red onion for colour, and it was a great way to use up the leftovers from a gammon joint - terrific for the day before payday, when the store cupboard comes into its own!

    Used onion instead of spring onions and used far too much cheese cause that's what Hubbie likes and he loved this. Will definately make again.

    I made this today with my 14yr old son and it was really lovely and so full of flavour. He'll make it by himself from now on (yeah, easy cooking day!) as it was so simple and was polished of by everyone at the table. We stuck to the ingredients as listed and wouldn't change anything.

    Delicious! Replaced 40g of cheddar with emmenthal as it was leftover in the fridge, and only used 6 rashers of bacon. The parmesan stuck to the dish so might do without next time or sprinkle on the top. After 15 mins I covered it with foil as the top was done. It was completely cooked in 25 mins (maybe dish was a little big?). Will make again.

    We really enjoyed this, next time I would use a shallower dish to cook for a shorter time, also did not bother with the parmeasan just greased and dusted with flour. Even kids enjoyed!

    Made this for tea and though very tasty it looked nothing like mine! Where does the yellow come from in the picture! Also mine did not puff up as much as shown! Next time I will double the ingredients as only just serves 4 with no seconds and my lot loved it so much they all wanted seconds! I served it with peas, but will also serve it with potatoes next time! Very yummy recipe that took exactly the stated time to cook!Another great recipe from Good food!
