    1. To make the batter, tip the flour into a bowl and beat in the eggs until smooth. Gradually add the milk and carry on beating until the mix is completely lump-free.

    2. Now whisk in the melted butter. Place a pancake pan over a medium heat and wipe with oiled kitchen paper. Ladle some batter into the pan, tilting the pan to move the mix around the pan and pour off any excess. Cook for about 30 secs until golden, then flip over and cook on the other side. Pile the pancakes up and serve with your favourite filling.

    Oooh these are good. They look lovely and golden too (due to having twice as many eggs as many other recipes, I guess). Served with lemon and a bit of sugar for me and a most elaborate cream-filled, chocolate, nut and OTT filling for hubby! All happy!!

    very tasty, i like them very much
    but if you wan to make less:
    100g flour
    1 egg
    250ml milk
    no butter
    this makes about 5

    Very good! We enjoyed these with bacon and lingonberry jam... which I am realizing sounds strange outside scandinavia... but delicious nonetheless

    I used 100g of flour, 200ml semi-skimmed milk, 3 large eggs topped up to 200ml with extra milk.
    Served them with chocolate spread, strawberries and brandy squirty cream (which I bought by mistake!)
    We usually have ham and cheese for main course then sweet fillings for dessert.
    One user said these were bland - all pancakes are bland unless you add sugar or vanilla etc to the batter or serve them with fillings.

    Made these yesterday for pancake day. Very good - served them with lemon and sugar, but there were a lot of eggs in this recipe compared to other pancake recipes.

    I lightened the mixture by using 2/3 skimmed milk and 1/3 water.
    This made the pancakes less stodgy and I cut down the amount of melted butter by a half

    We found these pancakes a bit stodgy and crunchy round the outsides. The batter seems a bit thick for pancakes.

    i always have my pancakes with icecream, sauce and chopped nuts all rolled up together, with a final lashing of sauce over the top of all your rolled pancakes and a sprinkling on sugar.
