Green beans with golden almond butter

Method

  1. Boil or steam the green beans until tender. Heat the butter in a frying pan, add the almonds and garlic and season. Cook until the almonds are golden and the butter is nutty. Discard the garlic, add the beans and toss.

To get ahead, you can cook the beans, rinse them in cold water, then reheat in the almond butter.

    Really, really nice. Lovely combo of flavours, incredibly easy to put together. Had it with lamb - all got gobbled up quickly!

    My almond flakes browned too quickly whereas the garlic (2 cloves for about 100g beans) didn't have enough time to infuse the butter with flavour. I suggest frying the garlic first a little and then adding the almond flakes. Otherwise a very good recipe, takes hardly any time and is good on its own or as a side dish for meat, esp. chicken.
