Baked red onions in balsamic

You can bake this simple roasted onion side dish ahead, giving you plenty of time to fill up on festive cheer with your guests

Method

  1. Mix the balsamic and sugar and leave to dissolve. Heat the oven to 190C/fan 170C/gas 5. Cut the onions in half from root to tip and lay cut-side down in a large roasting tin. Pour over the stock, cover with foil and bake for 30-40 minutes or until completely tender. Take out the tray and turn up the oven to 220C/fan 200C/gas 7. Take off the foil and discard, and turn the onions cut-side up. Pour over the balsamic mix, then put back in the oven and cook for 25-30 minutes until glazed and caramelised. Scatter over the pine nuts to serve.

Making it ahead

These can be baked the day before, then reheated in the microwave or hot oven and scattered with the nuts to serve.

    I had to cook down the juices in a pan to get the onions really sticky but this and the parmesan crusted parsnips made for a brilliant roast chicken dinner! Delicious flavours.

    If you're cooking this in a metal roasting tin, as I did - don't! I ended up with a very clean pan but black onions which tasted metallic. I was doing a big batch and those I cooked in a non-stick pan were fine. Also, like Luce, I had far too much liquid at the end of the first cooking stage and had to drain most of it away. Another time, I think I'll roast the onions in olive oil, as I usually do and then add the balsamic glaze.

    Great veg thats a bit more interesting than sprouts. I haven't tried it with top quality balsamic but i m sure it can only get better.
