Cranberry & chestnut stuffing

These stuffing balls are packed with Christmas flavours and make an attractive addition to the festive table

Method

  1. Cook the onion in 1 tbsp oil until softened. Add the cranberries and a big splash of port and simmer until all the port is absorbed. Cool.
  2. Put the chestnuts, pork, breadcrumbs, egg yolk and cooled onion mix in a bowl. Season really well, then mix and form into 12 balls. Wrap each one in a piece of streaky bacon. To cook, brush with olive oil and bake for 30 minutes at 220C/fan 200C/gas 7.

Pop these in the oven during the roast potatoes' last 30 minutes of cooking.

    Very, very tasty recipe - soooooooooooooooooooooo easy to make. In fact I prepared this on Christmas Eve (leaving out the breadcrumbs) and left in a bowl in the fridge overnight. Just added the breadcrumbs the next day and rolled into balls. Left the bacon off because we were having pancetta with the brussel sprouts and everyone commented on how yummy they were :-) Definitely worth trying!!

    Excellent stuffing recipe. Ran out of (drank all the) port, so used Cherry Brandy instead. Tasted grand. Wonder what I'll tip in next time...

  • splash port
  • 100g vac-packed chestnuts , chopped
  • 1 pack of 6 pork sausages , skinned

  • 6 rashers streaky bacon , halved
