Creamy Parsnip and Apple Soup

A great warming soup for the winter months

Ingredients

  • 25g butter
  • 1 medium onion, chopped
  • 1 large garlic clove, crushed
  • 450g parsnip, chopped
  • 250g dessert apples (Bramley?), peeled, cored and chopped
  • 1/2 tsp ground coriander
  • 1.2l vegetable stock
  • 70ml single cream

Method

    1. Melt the butter in a large pan, then add the onion and garlic for 3-4 minutes until softened. Add apples and parsnips for a further 3-4 minutes. Add coriander and stir for 30 seconds.
    2. Pour in stock, season well and bring to the boil. Reduce heat , cover and simmer for 25 minutes.
    3. Remove from the heat, wait for it to cool then blend it in the food processor until almost smooth (so as to keep a little texture)
    4. Return soup to the pan, stir in the cream and reheat gently, but don't boil.
    5. Serve straight away with a crusty loaf

Was so lovely!! Very sweet, would add slightly less apple if looking for a less sweet taste - didn't add the cream as didn't feel it was necessary :) also not confident those quantities would stretch to serving 5 people. Wonderful recipe, thank you!

Delicious soup! It had a beautiful flavour and I didn't add cream as didn't feel it particularly needed it. Very popular with family and friends and I've had several requests for the recipe.

Delish, I added crème fraiche instead of cream. Very moreish. I would never of put parsnips and apples together, but it was stunning.

Worked well. If you're going to freeze, add the cream when you reheat.

this was really easy to make and the result was amazing, really tasty! the balance of the parsnips and apples was perfect! delicious!!!!
