Method

  1. Gently soften the leeks in butter and oil in your largest pan for 15-20 mins until almost meltingly soft. You can soften the leeks up to a day ahead, then just reheat in the pan before continuing the recipe. Stir in the stock, bring to a simmer and cook, stirring occasionally, for 5 mins. Stir in the peas and spring onions for 3-5 mins more until the peas are defrosted and cooked through, then season and serve.

    This is one of the easiest, tastiest recipes ever. I tried it a few months ago when I had unexpected guests and the only vegetables I had in were leeks and frozen peas. Found the recipe in a panic and rustled it up. Everybody loved it and now it's a family favourite. Just try it, you won't be disappointed.

    I made it for dinner tonight with stuffed chicken breasts. I didn't have green onions but used chives from my herb garden instead. Very easy to make and delicious.

    Really light but tasty way to enjoy these vegetables, frozen sweetcorn is a nice addition too. You don't need as much butter as stated if you want to lower the fat content. We have it week nights with toad in the hole, no gravy needed!
