Lamb & spinach curry

Indian spices pack a punch and bring warming flavours to this simple one-pot supper dish

Method

  1. Put the ginger, garlic and onions in a food processor and whizz to a paste. Heat 1 tbsp oil in a pan then add the paste, green chilli and 1/2 tsp salt and cook for 3-4 minutes until fragrant. Add all the spices and cook for a couple of minutes. Add the lamb and keep cooking and stirring until browned. Stir in the tomatoes, tomato purée and a cup of water then bring to a simmer. Cover and cook for 1 hour.
  2. Add the spinach then cook for another 15 minutes. Serve with rice or indian breads.

    I absolutly loved this recipe and so did my husband. I used leftover lamb from sunday roast and it worked a treat. To make it even easier (for busy mums, workers etc), I used half a tin of chopped toms and didnt bother to chop the spinach. The end result was fantastic and will definatly be trying again :)

    This was a fab meal .... i did a lemon and mushroom rice with it complimented it very well.... better than any curry you get in the indian resturaunts, bit hot for my partner .. lol but he loved it ..anyway will most certainly make this again.. infact was enough left over to put in the freezer til next week .... yummm ...

    This is an absolutely beautiful dish, it is very difficult to beat a good lamb curry! Five stars in my view.

    Delicious. Not like an Indian restaurant curry, but good in its own way. A bonus that it's full of healthy ingredients. Simple to make.

    I have made this curry quite a few times and it has been such a great hit with my husband and one of my boys (the other two do not like the taste of lamb) I add garam masala also plus a few more tomatoes. Shahida

    I did this recipe but use a packet of lamb mince and added 4 potatoes cubed. GORGEOUS! I have it in a big bowl with torn pieces of warm naan bread for dipping and schlurping. Yum!!!

    This curry is completely delicious and so simple to make. I doubled up on the ginger, garlic, spices & chillies (used red as can't easily get hold of green in Warsaw for some reason) and stirred in lentils at the end. This was my first attempt at a curry as husband sees curries as his territory...I passed with flying colours and will be cooking again for the family tonight!

  • small chunk ginger , peeled and chopped
