Salmon with lemon orzo

A zesty, fresh way of cooking salmon fillet that's speedy and cheap too

Method

  1. Cook the orzo following pack instructions. Dust the salmon with seasoned flour then fry in a little butter and olive oil until golden, about 4 minutes. Turn and cook on the other side for another 2 minutes.
  2. Drain the orzo then toss with a large knob of butter, the zest, juice and basil. Season.

    My wife tried this recipe last night and it was very nice, I would definitely recommend. She did overcook the salmon a little but don't tell her I said that!

    Orzo is better known as Greek pasta and has the form of a rice grain. This is a nice dish. I would prefer some vegetables with it.

    I've just picked up a pack of orzo from the supermarket. I've never cooked with it before, but will certainly give this recipe a go!

    this is so yum................and so simple. I sometimes add cooked broccoli or other veges in with orzo at last minute. Orzo is available at some Tesco or Waitrose supermarkets.
