Method

  1. Heat the oven to 200C/fan 180C/gas 6. Melt the butter with the flour, cook for a minute, then whisk in the milk. Simmer and whisk to a thick paste, then fold in the cheeses and egg whites. Pour the mixture into 4 buttered ramekins. Cook for 12 minutes or until risen.

    great recipe - really quick and easy (especially as I had never made souffle before!) and very impressive result for dinner party. We used 6 ramekins instead of 4 but otherwise stuck to the recipe.

    WOW! I have never made souffles before, but these were amazingly easy and very nice to eat. Let them cool a bit though because they were very hot.

    I made one large soufflé and instead of using Stilton I used a mixture of goat's cheese and cheddar. It turned out really well and everyone loved it! Wonderful way to use up a bottle of pasteurized egg whites!!

    Really easy and very tasty. Unfortunately I filled the ramekins too full so they rose and then flopped over the sides creating a splodgy mess. Still tasted great. They took much longer than the 12 mins to firm up, probably because I put too much mixture in the ramekins. Will definitely make again.
