Shredded turkey quesadillas

An easy way to use up any turkey leftovers

Method

  1. Mix all the ingredients except the tortillas and season. Lay out the four tortillas and divide the mix between them, spreading it over one half of the tortilla. Fold over and press down. Heat a griddle or frying pan then cook on both sides. Cut into wedges to serve.

    Really yummy! So quick and easy to throw together. The whole family loved them. I used parsley as I'm not a big fan of coriander.

    mmmm yummy! Just had these for boxing day lunch, they were really tasty and so easy to prepare. What a great way to liven up boring cold turkey

    Really really easy and yummy. I don't have a griddle pan and didn't want to fry them so just stuck them under the grill - didn't take more than a couple of minutes on each side.

  • 1 red chilli , finely chopped
