Detox green soup

Cheap to make and good for you too, this watercress, rocket and spinach soup is ideal for January when times are lean and you want to be too

Method

  1. Cook the spring onions in 1/2 tbsp olive oil until softened. Add the potato and cook for 2 minutes then tip in the stock, season well and simmer until potato is tender. Add the leaves, simmer for a minute then whizz until smooth with a blender or in a liquidiser.

    Delicious soup. I added a small tub of creme fraiche (light). As I was concerned about reheating the spinach.

    I made this last night, and it exceeded my expectations! I used chicken stock instead of vegetable, and added 2 cloves of garlic. Quick, tasty...and virtuous!

    really lovely recipe - I too, added a dollop of creme fraiche (low fat) just to make it a little bit creamier. I also added a bit of chilli/garlic salt, a few pumpkin seeds for texture and quite a bit of pepper which made it lovely and hearty!! I will definitely be using this one again :)

    Great recipe! Super fast and very simple to make. I added some chillie flakes and some crushed garic when cooking the potatoes to give it an extra kick. I also added 1/2 tbspn of low fat (10%) Greek yoghurt but to be honest, it was already quite thick. I had with a grilled chicken breast so have another full bowl full left for lunch tomorrow!

    This recipe was quick and easy and best of all, delicious! I thought I'd give it a go as my budget is tight at the moment and so glad I did, this will become a favourite. Next time I'll be upping the quantities and batching it for the freezer

    I made this soup today - it was beautiful, quick and easy to make! I did add a couple of garlic cloves and I stirred in a little mint sauce after serving - next time I will try adding mint sauce to some creme fraiche and stirring in to serve - be this will be gorgeous, and look really nice in the dish!

    didn't find this to have the best flavour, also given that this only makes 2 servings, its not the cheapest soup recipe around given mixed leaves will cost close to £2. Wont be making it again.

    This soup is yummy and given the limited ingrediants it was very tasty. Its very quick and easy to make, a few changes: I used half a sweade (turnip) instead of a potato (had none) and I added a good pinch of chilli flakes and 2 garlic cloves

    I wasn't sure that I'd like this soup but since trying it a couple of days ago, I've made it every day since - it's delicious! If you've got them handy then try adding a garlic clove, some cayenne pepper or some celery.
