Method

  1. Mix the poppy seeds, zest and juice of the orange, red wine vinegar, olive oil and finely sliced spring onions.
  2. Drizzle over the smoked salmon and eat with rye bread and cream cheese.

Buying the best

You'll pay more for sustainably-sourced wild salmon, but it's worth it for the extra flavour. If your salmon is made from farmed fish look for organically farmed. Stocking densities will be lower, so the fish will have more room to swim and be leaner fleshed. Smoked salmon vary in flavour from a hint to a full-on hit of smoke.
