Prawn, chorizo & tomato kebabs

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Put the tomatoes cut-side up on a baking sheet, top with a thin slice of garlic, a piece of thyme, a drizzle of olive oil and sprinkle of salt on each. Cook for 30 minutes.
  2. Grill the chorizo and fry the prawns in a little oil, keeping everything warm. When the tomatoes are done, onto each skewer push a prawn, a piece of basil, a piece of chorizo, some more basil and a tomato half.

    So tasty. I didn't use thyme as I forgot to buy it and don't think the capanes suffered. I put the cherry toms in the oven for only 20 minutes and i'd be tempted to do 15 next time. I think 30 minutes would make them a bit slushy.

    Delicious, the first one to go! I didn't bother grilling the chorizo but chucked it in the pan with the prawns and then lifted out with a slotted spoon.

    yummy....absolutely lovely. I cooked the tomatoes and chorizo a day in advance and reheated them on the day as I cooked the prawns to make it even less hassle on the day and it didn't affect the end result at all! Perfect!

    Made this last night! They were so tasty!! You need to be quite quick to keep everything hot. I grilled the sausages on the george foreman. I also would leave the tomatoes in for more than 15 mins. Very nice!

    I simply grilled both the tomatoes and chorizo, it took less than 10 mins. I had no skewers so placed all the components on a bed of spinach. Fantatic starter.
