Stir-fried winter greens with garlic & chilli

Blanching keeps the greens a bright colour in this vibrant dish

Method

  1. Bring a large pan of water to the boil with a little salt. Blanch the greens for 1 minute, drain and rinse in very cold water. Squeeze the excess water out.
  2. Heat 3 tbsp oil in a wok. Fry the garlic and chilli until the garlic is golden and spoon onto kitchen paper. When ready to serve, heat the greens through in the wok and toss with the chillies and garlic.

    Good quick recipe, used sweetheart cabbage, and looked just like the picture and tasted good. Went well with belly pork and plum sauce recipe.
