Carrot & radish salad

A refreshing salad that's perfect for serving to a crowd, any time of the year

Method

  1. Boil the vinegar with the sugar and 1 tsp salt in a pan until syrupy, about 2-3 minutes. Remove from the heat and cool. Put the carrots and radishes in a bowl and pour over the cooled dressing. Chill for at least 1 hour so that the veg are crisp.
  2. Before serving, sprinkle with the sesame seeds and season.

    Added some fresh mint and a little bit of sesame oil. Was a delicious side dish for a curry

    I'll not be trying this one. I spend a load of time trying to find food with no added sugar (as my husband has diabetes). So tinned fruit and everything - needs to be non-syrup. Then I look at a new salad recipe and - find it's made the same as too much tinned fruit, ie with a syrup! If we want sweetness, we can add a wee bit of honey or some sweet fruit. Carrot salad is lovely made with grated carrot, lime juice, and some raisins soaked in diluted orange juice/cold tea/whatever. Maybe a wee bit of salt sprinkled over (though I don't usually do that, as I prefer my food without too much salt).
