- Put all the ingredients except the spring onions and coriander in a medium pan. simmer until the rice is al dente, about 8-10 minutes, and then drain off any excess liquid.
- Put back in the pot and add the onions. Keep a lid on until serving. when ready to eat, stir the fresh coriander through.
