Spanish bean stew

Cannellini beans, chicken thighs and spicy chorizo make for a satisfying and simple one-pot supper

Method

  1. Heat the oil in a large pan. Cook the chorizo, onion and chicken over a high heat for 5 mins. Add the tomato and cook for a further 2-3 mins until pulpy.
  2. Stir in the beans, potato and stock. Bring to the boil, then cover and gently simmer for 20 mins until the potato is soft and the chicken cooked through. Stir through the parsley and serve. You can cool and freeze the stew for up to 2 months. To serve, defrost and heat through thoroughly.

    I made this recipe yesterday and it was a great hit....I put a tin of tomatoes instead of just one tomato and let it simmer for an hour...added some dumplings too......will make this recipe over and over again for weekday meals....great on a cold winter's evening

    This is a great, easy tasty meal. I would recommend it to anyone and everyone. I used a little less cannellini beans and a little more potatoes just because i love potatoes, but it was just as good. Everyone needs to make this dish.

    We both loved this one, but unlike Erin, I would add more cannellini beans and reduce - or miss out altogether - the potato, as we found it extremely filling, but then we are on the elderly side. I added 1/4 teaspoon smoked paprika and 1/2 teaspoon sweet paprika, plus a clove of garlic (added towards the end of the initial cooking), which made it exactly to our taste. I might try adding a splash of sherry next time.

    I love this recipe and it is even better the next day - I make sure that I put plenty of chorizo in and then add coriander at the end and have crusty bread on hand for dunking!

    Great stew, we really enjoyed it. I didn't have any chorizo the second time I made this so added half teaspoon of smoked papriks and a sliced garlic clove and it was still superb. Extra potato for me too.

    This is so delicious. I've made it a few times and it is always a big hit. I love chorizo so the chunky slices in this are perfect for me. And it tastes even nicer the next day. This is a dish I'll make over and over. Yum yum :)

    This became an instant family favourite. It's so easy to make, and easy to extend by adding your choice of extra ingredients. Even my kids love it - it's not too spicy, the chorizo just gives it a really yummy flavour. And apparently you can eat it the next day or even freeze it, although I'll never know because every last drop gets eaten up right away.

    Superb recipe! I had some chicken and chorizo, and wanted something different to do with it. Amendments: - I couldn't get cannelini beans so I used butter beans- delicious! - I had a lot less chorizo than recommended and a bit less chicken, so I added two tomatoes and three potatoes to fill it out nicely, worked a treat - Added about 2 teaspoons of paprika, lovely flavour - Bit of salt and pepper to bring out the flavour Definitely a new favourite dish!

    Excellent recipe. Used chicken breasts instead of thighs and added two fat chopped garlic cloves, two tspn smoked paprika and a pinch of dried chillies. My husband said he would like this one "every two weeks please!"
