Try this clever little idea for serving salad at a party

Ready in 40 minutes
- Heat the oven to 200C/fan 180C/gas 6. Toss the bread with 1 tbsp olive oil and some sea salt. Bake on a tray until golden.
- Mix the crème fraîche, Worcestershire sauce, dijon, garlic and parmesan with a squeeze of lemon.
- Put a piece of chicken or egg in each little gem leaf, then add the croutons, spring onions, a drizzle of sauce and the parmesan shavings to finish.

- 6 tbsp half-fat crème fraîche

- 1 garlic clove , crushed
- 75g parmesan , grated, plus a few shavings
- 1 lemon , juiced
- 4 Little Gem lettuces , leaves separated
- 2 chicken breasts , cooked and torn into 12 bits
- 4 spring onions , shredded
