Goose-fat & bay roasted potatoes
Simply done but so good. The best roasties for your Christmas feast

Ready in 1 hour 10 minutes
- Peel and cut the potatoes into large chunks. Parboil for 5 minutes, then drain and shake in the colander to fluff up the edges. Meanwhile, put the goose fat in a roasting tin and put in the oven. Once the fat is hot (about 5 minutes) remove the tin from the oven, tip the potatoes in and toss them in the hot fat. Tuck in the bay leaves and put back in the oven on a low shelf.
- After 45 minutes, turn the oven up to 220C/fan 200C/gas 7, move the roasties to the top shelf and cook for another 20 minutes until golden and cooked.
