Goose-fat & bay roasted potatoes

Method

  1. Peel and cut the potatoes into large chunks. Parboil for 5 minutes, then drain and shake in the colander to fluff up the edges. Meanwhile, put the goose fat in a roasting tin and put in the oven. Once the fat is hot (about 5 minutes) remove the tin from the oven, tip the potatoes in and toss them in the hot fat. Tuck in the bay leaves and put back in the oven on a low shelf.
  2. After 45 minutes, turn the oven up to 220C/fan 200C/gas 7, move the roasties to the top shelf and cook for another 20 minutes until golden and cooked.

    Step 1 doesn't give the oven temp or am I missing something? (They look good though! I've scratched my screen trying to fork one of them, lol!)

    for step 1, I would put them in gas mark 5. you don't want the fat too cool as the potatoes will just absorb the fat Hope this helps
