Jamaican Curried Goat

Jamaican chef Patrick Williams has created this delicious Curried Goat recipe. Make your own version, which is as authentic as you would find in Jamaica.

Prepare meat 6-8 hours before cooking

Method

  1. Season the goat with the curry powder, thyme, pimento, black pepper and coriander seeds at least 6-8hrs before using it.
  2. Preheat oven to 150°C/300°F,gasmark 2. Heat oil in a pan and cook the goat pieces until golden brown.
  3. Soften the tomatoes, onions, peppers and garlic in some olive oil and add it to the meat. Immerse the ingredients in double their quantity of water or stock and bring to the boil.
  4. Remove from heat and place in preheated oven for 1-1 to 1½ hours, until goat is tender.
  5. When ready, remove goat from pan, simmer sauce till reduced by half, then return meat to pan and serve with rice and peas.

    You can buy great quality goat meat from a respectable Halal butcher or a local farm. Lamb is good but Goat is much tastier. Cooking this way also means it'll taste better with the meat falling off the bone. It's also nicer if cooked a day ahead. It is important to marinade the meat prior to cooking.

    As someone who is more than happy to describe myself as an expert on curried goat ( Born in Jamaica),this is certainly not the way to cook curried goat! As a start you do not use tomatoes (This can almost certainly cause the meat to 'go off' in a short time). Ingredients required: a.Spring onion b.Scotch Bonnet Pepper (Please avoid using the seeds) c.Pimento seed d.Ginger e.Seasoning salt (Very little-This isn't a must) f.Salt g. Jamican curry or Jamaican Indian Curry (This can be very difficult get in the UK but this makes a 'million' difference to taste). h. Tyme

    Hi I have added some loose Pimento seeds for extra flavour, also in the method it asks for you to Soften the tomatoes, onions, (peppers)and garlic in some olive oil and add it to the meat. Immerse the ingredients in double their quantity of water or stock and bring to the boil.but there's no (peppers) in the the ingredients list Only fresh ground pepper, so I added half a red pepper and half a orange pepper chopped and deseeded, as for the taste I'll let you know soon as its still cooking, I've already tried Levi's roots version carnt wait to see which is better:)

    this recipe is spot on delightfully lovely and hits the spot its like my partners nanny carmens curried goat, its better than the levis roots curried goat that i made i reduced the sauce to half and put the meat back in for 30-45 mins

  • 550g shoulder of Goat (bone in), diced
  • 3 Tbsp West Indian curry powder
  • 1 tsp fresh or dried thyme
  • 1 tsp ground pimento seeds
