Spiced root vegetable soup

This hearty vegetarian soup will warm up cold winter nights and can be frozen for later

Method

  1. Heat the olive oil in a large pan. Add the onions and fry for 5 mins until softened. Tip in the remaining veg and cook for another 5 mins, adding the chilli and cumin for final 2 mins.
  2. Add the lentils and stock to the pan. Bring to the boil, then lower heat and simmer for 25 mins until veg are tender and lentils are soft. Blitz until smooth with the milk and a little extra water or stock, if necessary. Season, then reheat until piping hot.
  3. Ladle into bowls and serve with a dollop of Greek yogurt and a sprinkle of chopped coriander.

    This soup was perfect for a cold day, only changes I made were to leave out the milk, just adding a little xtra stock and left out the greek yogurt. It was delicious and made plenty to take to work for lunches!

    My 8 yr old saw this recipe and insisted that I make it for him. I was very skeptical that he would have it once prepared but surprisingly he loved it! Will definitely make it again as long as his taste buds go in favor for this soup. Not only is it delicious it is equally healthy.

    Gorgeous, and freezes wonderfully. Perfect food for this cold weather. Have made many soups of this type but this one had a particular fluffiness to it (probably the sweet potato) that made it my favourite so far!

    Thought this recipe was so easy to make and tasted great. Added 1 extra potato, parsnip and carrot and an extra chilli too. Had 2 bowls with Tiger Bread and was full for the rest of the night!!

    Delicious. I reduced the amount of stock cube : water so I can feed it to my seven month old. He loves it too!

    Delicious! Was a bit dubious about the amount of milk but don't be - I couldn't tell it was there and it made it so lovely and... silky? It's yummy without the garnish, but the yogurt and coriander just added that extra mmmm.

    Made this today for my to boys off school with flu. Its very good, one of the best vegetable soups I've made too. I followed the ingredients exactly as I had them all in. Would also add neep (turnip) too but didn't this time. Its as good as the sweet potato and lentil and the Gary Rhodes spicy potato soup, these are also both excellent and have been passed on to many people. Another winner!

    Really like this and very easy to customise to make best use of what needs using up. I added some rocket leaves. Agree the yogurt and coriander make it a bit more special. Ideal to make in double quantities and freeze. Probably a bit to hearty for a starter but perfect for lunch.

    Gorgeous soup. I had to make quite a few changes to fit in with the ingredients that I had to hand but it still turned out very tasty! I used half a dozen new potatoes instead of sweet potato, 1tsp cumin seeds instead of the ground cumin and a generous pinch of chilli flakes in place of fresh chilli. I also used red split lentils because it was all I had and I left out the milk and yoghurt because it was a nice taste and consistency without it (plus it cut down on the calories even more). I will probably follow the recipe properly at some point to compare, but I was very happy with the changes that I made and will definitely make this again either way!

    This soup was delicious - made it as a starter prior to a traditional haggis dinner for my wee clan whilst the mother in law was visiting! Went down really well. Was a bit worried at the amount of cumin that went in but once all was whizzed up it was a just a gentle kick of spice to the taste. I missed out the greek yoghurt but added in a bit of swede. Really lovely hearty soup that made quite a large amount. I will definitely be making this again especially in the winter months. It will also make a great lunch for work.
