Ingredients

  • 2 tbsp olive oil
  • 1 large aubergine, cut into small cubes
  • 6 rashers smoked streaky bacon, roughly chopped
  • 2 garlic cloves, crushed
  • 1 red chilli, finely chopped
  • 2 x 400g/14oz cans chopped tomatoes
  • 300g pasta (we used fusilli)
  • grated parmesan, to serve (optional)

Method

  1. Heat the oil in a large frying pan. Add the aubergine and cook for 8 mins until soft. Add the bacon and fry until cooked through, adding the garlic and chilli for the final min. Tip in the tomatoes, increase the heat and cook for 10 mins until thickened, stirring regularly.
  2. Meanwhile, cook the pasta. Drain well, then stir through the sauce. Serve with a scattering of Parmesan, if you like.

Cheap, satisfying and really tasty. The whole family loved it. Will definately be doing this again and again.

I just did it, it was gorgeous! I'm not so keen on pasta, and the weather is rather chilly, so I cooked brown rice and mixed it with the sauce and baked it in the oven with some grated cheese on the top. But I certainly will try it with pasta also.

Very very nice! I used half the pasta, one tin of tomatoes and added some chestnut mushrooms and peas for two. Will have the leftovers for lunch tomorrow!

Really delicious and easy to make. My only addition was a tablespoon or so of balsamic vinegar just before the tomatoes go in to add a bit of depth. Will make again and again, delicious!
