Method

  1. Pulse the almonds in a food processor until most are finely chopped. Remove and transfer to a bowl. Whizz the figs until they form a sticky paste, then add this to the almonds with the remaining ingredients. Mix well, then shape into a sausage and allow to dry, uncovered, in the fridge or a cool, dry place for a week.

  2. Wrap and tie in baking parchment if giving away, then slice and serve alongside your favourite cheeses. Will keep in a cool place for up to 2 months.

Beautiful, my guest all said how interesting the flavours where. I served it on a cheese board with a selection of cheeses and it went down well. Several people asked for the recipe

This had a great flavour. Works best if ingredients are cut up more finely than the recipe suggests.

This is a great recipe. I've made this to eat myself (with cheese or on it's own) and given it away as presents (wrapped up in greaseproof paper and string - very Sound of Music!) and been asked for the recipe. Really easy to make and tastes delicious.

Such fun to make! Can really get your hands dirty smushing it all up! A tip would be to blend the ingredients in very small portions as they tend to stick together, then when mixing all the ingredients together just use your hands.

A lovely gift for hampers when wrapped up :)
