Parma ham with celeriac remoulade

A quick and easy idea for using this gourmet Italian ham - makes a glamorous Christmas starter

Method

  1. Mix the celeriac with the capers, horseradish and mayo and season.
  2. Lay the ham slices on a work surface and put a pile of remoulade at one end of each and add some rocket. Roll up each piece of ham around the filling.

Buying Parma ham

When buying Parma ham, look for the official Ducal crown stamp (branded on the whole leg or on the left hand corner of the packaging on pre-packed ham). Only authentic Parma ham carries the stamp.

    Delicious, easy to make have made it several times and added soft boiled quails eggs to the remoulade for a very impressive starter.

    I made this for Mother's Day and everyone enjoyed it, easy to make and looks impressive as a starter. Went well with the roast beef for main due to the horseradish! I liked it so much I've made some just now for my lunch tomorrow!!

    Wonderful recipe - but LUDICROUS quantities! _HALF_ a celeriac for two people? I think not. I used half a celeriac for _6_ people, and had tons left over. But - it's a very impressive recipe, full of wonderful flavours. Don't skip the rocket - it's essential. I used three pieces of ham per person, which was ideal.

    Have made this several times for guests and it's gone down very well. Agree that quantities are huge - it's quite rich with all the mayo. We found that one per person, with some toasted brioche on the side was plenty.

    Delicious. You could also use the filling seperately. I use part mayo, part creme fraiche, too rich otherwise.

  • ½ celeriac , peeled and shredded , keep the shreds in water with a squeeze of lemon so the celeriac doesn't go brown
  • 1 tbsp capers , rinsed and drained
  • 1-2 tbsp horseradish cream, depending on how hot it is
  • 2 tbsp mayonnaise , mixed with 1 tsp Dijon mustard
  • 6 slices Parma ham
  • handful rocket
