Thyme punch

This fresh-tasting herby punch is sure to go down a treat at your festive gatherings

Ready in 10 minutes plus chilling

Method

  1. Finely dice the ginger slices, muddle (ie mash up) with the caster sugar and tip into a jug (if you own any ginger liqueur, you can use 75ml of that, instead of sugar). Add the lemon juice and gin, followed by the thyme. Top up with lemonade, stir, and chill.
  2. Just before serving, add a handful of ice cubes and stir again.

    Lethal but lovely, the thyme really brings out the botanicals in the gin, not as sweet as you think

    After searching high and low i finally managed to find Still Cloudy Lemonade (Sainsbury's taste the difference). This cocktail was lovely and like Sarah said above it wasnt too sweet. I would make this again, not this weekend though as i will be making the Sly's Honey Mule also on this site:o)

    Tasty! Took a lot of 'thyme' to make as we made our own lemonade (great taste and texture, but time-consuming). It packed a 'punch' :)

    I've made it with and without, and I personally don't <think> the sugar is necessary -- without it was just delicious, and really lets the gin stand out. Next time, I think I'll bash the thyme a bit, either with a rolling pin or in a pestle & mortar, since it took a while to really infuse into the drink -- maybe lemon thyme would be yummy. Finally, it tastes so different with different varieties of gin (though I don't know why that came to such a surprise to me!), that it's worth experimenting to find which you like best.

  • 3 or 4 thin slices ginger
  • 5 tsp caster sugar
  • 35ml fresh lemon juice (about 1 lemon)
  • 250ml gin (Tanqueray is good)
  • 6 sprigs thyme , very roughly chopped
  • 650ml traditional still, cloudy lemonade
